oily...?? ProQ Cold smoke generator
Hi,
I've been attempting to use the cold smoke generator to smoke my jalapeno's. I'm using a kettle style BBQ (new) with the generator in the bottom and the chillies (cut in half) on the grill. Bottom vents and top vents open to around 2cm.
The problem is I'm finding there is a lot of oil produced, after the first smoke the lid was actually dripping oil onto the chillies, the grill was sticky as anything and a small pool of oil was at the bottom of the drum.
I'm finding that the Jalapeno's are quite oily too which is preventing them drying to a crisp - Is this normal or am I perhaps doing something wrong?
I'm using ProQ Apple wood dust. Any advice would be great!

Just a thought but was there a coating of some kind on the new grill?
I have not used the cold smoker generator but I have smoked many a piece of meat
using wood coal fires Open vents are your friend or to say it another way
a little smoke goes along way

Seems like it's condensation causing the problem. I would try opening the top vent more.
The cold Smoke Generator will not dry out the chillies, it merely adds smoke flavour. If you want them dry, this will need to be done after smoking them.

ok thanks guys - i'll open up the vents a little more and give it a go
