It was my little boy's 5th birthday yesterday. Like any responsible parent I was up until 1.30 on Wednesday morning assembling a table football game before bunging a pork butt on the smoker.

Here are some pics.

Tuesday morning - back from the butcher (I took a some pictures of pork butts to him last weekend and he worked out the cut).

Here it is with the fat cap. 11.5 pounds of porky loveliness.

Then covered in rub, covered in cling film and into the fridge for about 14 hours.

Into the smoker at 1.30am - sprayed occasionally with cider and oil. I've got a Weber remote temperature sensor. Guess what? It has a max readout of 180F - once you reach that it does weird stuff. It was showing 178 to 181 for about 2 hours until I decided to stick a fork in the butt and found that it was fork-tender.
So - here it is at 4pm.

It was wrapped in foil and held in a warm oven for a couple of hours then shredded and served at about 6pm.

It was delicious. I made a few sauces for people to try including a vinegar sauce. Everything but the shoulder blade was eaten.

I have never tried pork butt myself
will also have to adventurer

Cheers! Where in Belgium are you? I worked in Zaventem for a couple of days a week for many years.
