Smoke That Chicken - The First Cook Off
Couldn't wait till the weekend to try the new smoker so fired it up mid week for the 'trial' cook.
Decided to go for the chicken test first time out:
Rubbed with Rich n Lou's secret BBQ rub
Getting the coals going (notice a gazebo up cos of the rain!):
In and smoking
Just done (now the sun is out)
The finished artice!
It tasted great, and my wife has made a great stock from the bones which has given our latest batch of Boston Beans an authentic smokey hit.
The next project is a brisket set to start on Sunday morning:

I dunno, after doing 4 contests in 6 weeks, I thought I was ready for a break...now that I'm looking at more than a month of not competing, I'm trying to find one to work into for this month. There's a big one in the northern part of the state next weekend, but I don't think I'll be able to get off work next Friday to go. Maybe I'll just call up a few of my buddies and see if they want to throw some cash in a pot and do a winner takes all contest among the group. There's an idea!
