So what to cook first?
I won't have a chance to cook on the Excel until like the first of August. Taking a long needed vacation next week.
When I get back.. what do you propose I cook first? What do I need? Just a bag of kingsford and some wood chunks? I already have a probe.
Thoughts? Ideas? Should I do something easy first on the smoker (like a fatty) just to get something under my belt? Or should I go all out and do a brisket?
Do I need to temper this thing? Run it empty on smoke first.. get some nice build up in there?

I would suggest a couple of chickes for an easy start or a pork butt for pulled pork.
The pulled pork will take some time but its very forgiving.

Can you mail me some of those white sausages you had in some pics awhile back? Haven't had those since the Hofbrauhaus in Munchen.

Actually those were just steamed bratwursts instead of the bavarian "Weisswurst" you propably had in Munich.
Shipping over the pond wouldnt be good idea, i guess you´d have some kind of new life form inside
the box when it finally arrives in texas.

We're planning a Battle for Bullet Smoker Supremacy on August 9th over here in Illinois. Pitting the ProQ Excel against the WSM...should be a fun time. I'm gonna try to get a bunch of pictures and hopefully some video too. Your thoughts on the battle would be appreciated.
Back on topic though...I think we're going to do a couple of quick cooks for the battle...Chicken and Pork Loins. Any other suggestions?
