Thanks Gandalf, I put rub on the chickens yesterday, calibrated the thermometers, I'll start the fire later this morning to season the unit & put the food on an hour or two after that.
I'm looking forward to it after all the preperation

My fire is started and I just put some rub on my ribs. Leg of lamb is seasoned and oiled and studded with garlic slices and rosemary sprigs Very Happy

At least today I have lots to do so won't be checking and fiddling every 5 mins Embarassed

That's a good tip for novice, you will probably be wanting to open the door etc to see what's happening pretty often but you just need to leave it be.... If you're looking you ain't cooking afro

OK, so it worked out better than I could have imagined, & no one has food poisoning, (bonus) cheers . I've taken some pic's but i'm messing about trying to load them
