Stuffed and Rolled brisket ?
I have a question about this stuffed and rolled brisket recipe.
Is it like a brisket flat in the US? About 1 to 1 1/2" thick with maybe 1/4" fat cap on it? Do you trim that down even more? Is the fat rolled up on the inside or outside? I would imagine inside so the outside gets a good bark or crust on it.

This is how brisket is sold here in the UK, never seen it in any other form...
