Serrano wrapped Codfish Filet
Howdy folks...
Here´s todays Dinner :
A Codfish Filet, a little less than a pound.
Basted with Tomato Pesto
some fresh ground pepper
rolled up
and cut in quarters
Then i wrapped it with Serrano, basted with olive oil and topped with some more pepper.
While the fish was waiting in the fridge and the WSM was heating up (without waterpan) i prepared the sides :
Cut up some wild onion and put in a foil pan with a little water and butter.
Put some Brussels Sprouts seasoned with EVO, alst and pepper in another pan.
The i closed up those two pans with foil and put em on the WSM a little ahead of the fish.
Meanwhile i prepared a little mixed salad and put some heavy cream and a little bit of the tomato pesto into another foil pan.
I also cut a pepper in half and filled it with mozarella and herbs de provence.
There it goes on the WSM.
The foilpans in the back are the ones with the onion and brussel sprouts.
When the codfish reached its desired internal temperature, i pulled it off the grill to rest a bit. Then i reheated the cream/pesto mix and added the wild onions (water removed) to the cream and let it boil and reduce a bit.
Dinner time
Now this was a mighty fine meal. I´m definately gonna doctor around that recipe a bit.

That plate looks awesome, and I don't even like brussel sprouts.
This serrano you wrapped the cod in, the only reference I can find to serrrano is chilli peppers which I know.
It looks like a prosciutto, is it related?

Serrano is the spanish counterpart to the italian prociutto.

Very nice plate DM. You are taking the BBQ to another level..
But I got to ask.. No starch on the plate..?? It looks kinda naked without some starch.

Well, im tryin to cut back on carbs a bit.
