I recently asked my local butcher if he knew what the Boston Butt cut of meat was and he didn't.

I think I recall reading on here also that people had similar experiences because the cut is not one that British butchers know.

Thankfully for me Jim explained the cut to me earlier with a diagram but it did get me thinking about other cuts I've seen on the many American BBQ websites that didn't sound familiar to me. I can usually work out what the cuts are but not being a butcher I can't guarantee I've understood correctly.

Long story short I had a quick google around to see if I could find anything to explain some of the American style cuts I'd seen and I came across a butchery manual from Cornell University printed in 1979. It explains the Boston Butt in clear diagrams I know I can show to my butcher. I thought I'd share the link with you all in case anyone thinks they might find it useful.
