Cold Smoked Salmon
Got a nice piece of Salmon from the supermarket, so after the tedious
job of scaling the side... why don't people here do the job before they
sell the fish (I'm happy to prepare fish that I have caught)???
Anyways, put it a dry cure mixture, some coarse salt, sugar and a bit
of black pepper. I will leave this in the fridge overnight, then it's
on to the smoker for at least 8 hours tomorrow.

Right took the Salmon out of the fridge on Sat morning, rinsed off the salt, let it dry for an hour...
Placed it into the cardboard box smoker (other thread), the haning hooks from my Excel 20 worked great for this.
Got the Cold Smoke Generator started and put it through the flap
The weather was heavy showers/ with high wind (sounds similar to the summer we've just had), so I had to improvise.
A couple of hours in.
10hrs later.
It was really tasty (better than any stuff I've bought)... the money shot!

Did cold smoked trout on Friday night and it was ready in time for breakfast on Saturday morning. I will definitely be doing some home smoked salmon for the holiday period. Also got a pork belly planned so I can smoke up some streaky bacon The cold smoker is an amazing device and I couldn't be happier with it. Thanks Mack!

Today I am doing some smoked salmon. I bought a couple of steaks and they are currently in the fridge covered in salt, sugar and caraway seeds. Soon I will wash them off and dry them and then they go in for smoking overnight.
