smoked salmon: drying in fridge?
Hello
as I want to try out my first dried salmon this weekend (have a good friend come by who wants to be a guinea pig) I have some question about curing and drying times as I am not much at home this weekend:
I'm planning on dry-curing the fish for 48h in the fridge. Is it a problem to leave the fish to dry for 2 full days in a cold fridge? Or should I let it dry for one night and then wrap it up in plastic until the next day so I can start smoking? Is there a maximum limit on the drying time?

thanks, the salmon is now curing in salt/sugar.
While I was in the fish-shop, I also bought a small piece of halibut, which is just relaxing in some salt
