Second smoke and questions

OK - not sure how my other post got deleted, but anyway -

XL 20 with a stack. My first bullett, so I am new to vertical.

First smoke, used lump with some hickory fist sized log segments mixed in. Tried the minion method. On rack were one racck beef ribs, two pork ribs, and the top with ABTs and clicken lollipops.

Water pan 3/4 full. Came up to temp well, but after all stacked and loaded, temps fell (all vents wide open) and would only maintain about 170ish with some spikes to 220.

Yesterday, one pork but - big. This time, rest of the lump, and some larger hickory sections. Could only get up to high 170s, so opened up the lower door for more air, and temps climbed up. Sometimes it would run away, and so closed the lower door.

then I tried pushing the coals a bit to the side as to allow a 2-3" hole for air to drop below the coals, and that seemed to help, but any time the door is closed, the temps fell as low as the 150-160's with all vents wide open. This was a consistant problem over 10 hours. Door open, could get over 300. Door closed, struggled to get 200, and you could tell, the temps would continue to drop.

Now then - what am I doing? Do you think there is not enough airflow across a basket of lump? (all those small pices do not allow enough flow)?

Also noticed that my water pan burns off in about 4-5 hours and needs refilling.

was having a bit of a problem maintaining thin blue smoke. perhaps that was the hickory interfering?

Load more fuel from the start and let your more begin burning.
Add hot water to the pan.
Use larger chunks of fuel.

I save all the small lump for the Weber.

I had the basket very full, even shook down and refilled.is there a problem with lump only?

I find that a mixture of lump and Briquettes work best for me. Also try and not use too large a section of smoke wood it's better to either have several pieces spread out or place larger ones on top of the hot coals.

I think that when mixing in larger chunks it causes a void between the coals and doesn't allow them to ignite with that chain reaction. I don't know but it sounds possible.
