UK convert to US - smoking

Hi All,

I am extremely happy I have found this site! All of my grilling and smoking questions can be answered!!! Good to know there are other smoking nuts out there!

Originally from the UK but have lived in northern New Jersey (working mid town NYC) for 4 years and have managed to acquire a fair few grills of different sizes and variety!

Summit Gold C and old Genesis Gold C – both gas with side burners and used daily, One Touch Gold - weekend when more time, a WSM (favourite – and very well used!) and last but not least is being delivered to my house in the UK this weekend – ProQ Frontier!!

I will post some pics of the WSM and what it has been producing and various other grill pics including one in 3 feet of snow, proving grilling is an all year round activity!

More recently have been back in the UK for work, and have really missed slow smoked ribs! Hence whilst search for a smoker yesteday, stumbled upon this site!

Wife thinks I am bonkers by the way – but loves the food I produce!

Using Texas BBQ rub and the WSM, smoking with a variety of hard woods and Kingsford for up to 8 hours produces the best tasting ribs with a fantastic smoke ring! (pics this weekend).

Books I am using are Weber’s Big book of grilling (OK) and Weber’s Real Grilling – the only book you need IMO. Various Bobby Flay books, and a Still Smoking book – author I can’t remember.

Only issue I have come across in the UK is the charcoal. What is everyone using? Question I suspect that I might struggle to find Kingsford here…

Hi,

baby backs and racks of 6 beef ribs. rub left on for a couple of hours prior to loading them into the WSM.

all at about 190 degrees +/- until they break when you pick them up..... in at 10am eat at about 6pm. Mmmm.

Obviously you can do them faster, but i can load the WSM up and leave it all day, maybe chuck a couple more chunks of wood on mid after noon and refill the water pan, but thats about all the work involved.

no sign of the ProQ as yet this morning, but bought a couple of bags of sainsburys charcoal (not self lighting!) last night in preparation.

Got a big box of mesquite chunks too in the airing cupboard, so will remove the bark this morning!

Got 4 racks from Costco and a butterflied leg of lamb from our farm shop for tomorrow lunch...

and of course a case of Coors light (I know, I know....) and some decent red for the lamb. (There is a wine from California called 'Smoking Loon' which we drink by the gallon and my wife seems to buy me with alarming regularity!)

Will set up hosting account and post some pics later today

Back to charcoal - what does everyone use? I have access to some locally produced lumpwood, and have requested they filter out the bigger pieces for me (a lot of it is like dust). but today it'll be sainsburys 'best'.....

Hi Dan I see you are new to this site as well, welcome - sounds like you know what you are doing - all new to me !!
If you are rated as a sausage burner then I must definately be a sausage cremeter Wink

I have been using whatever I can get my hands on. I went to Adsa a picked up a bag of their lump just to try it out. The hardware store up the street carrys some off brand lump and briquet's. It's really an off and on type thing because the understanding of how to care for lump isn't a priority... not yet at lease but i' working on them. Very Happy

I mostly use the coconut charcoal, but if I can't get that, I try to get Resteraunt grade lumpwood, failing that I use normal briquettes.

Remember to stock up now because you will play the devil trying to get it 'off season' unless you find it online.
