Beech - both to cook with and in the CSG
Has anyone got any opinions about beech?
The other half wants me to build a kitchen trolley/butcher block, and to match the rest of the kitchen it's going to be made from beech.
Given all the sawing and planing I'm going to be doing, I reckon I'll end up with enough offcuts for several cooks in the ProQ and probably a cubic foot or so of beech dust (I use a powered planer, which creates tiny chippings rather than the sort of shavings you get when planing by hand). It's tragic to see so much expensive timber planed into oblivion, but there might be an upside - if I remember to change the bag on the chip extractor from the usual pine-and MDF-filled one, I'll end up with quite a lot of pretty pure product - enough to fill the CSG many times over.
But is it any good?

I use beech dust in the CSG to cold-smoke molasses-cured bacon.
Works a treat!
