Larry the lamb is donating his legs for 1/2 price at the local supermarket so I got me one. Should I bone it (fnar fnar) before I smoke it? Is 5 hours about right (think I saw this in another thread)?

I wouldn't bone it, the great thing it that te bone will heat up and help cook it from the inside out thus keeping the meat from drying out externaly in a long cook.

That's what I thought but wanted to check...... Smile

Just picked up 3 racks of spares to smoke tomorrow. No way I can eat that much (ok I could but I shouldn't) so looks like my project team will get a treat on Monday morning at the team meeting (or should that be meating Very Happy )
