"Mc Rib" on the excel
Howdy folks...
While i was burning in my UDS this morning i decided to cook some ribs
on the excel just like in a UDS, without a waterpan high above the coals.
Seasoned two slabs of baby backs with "Bob Tallmans" all around seasoning and fired up the excel with just 1 Kilogram (little more than 2 pounds) of Coconut Briquettes. Added some Hickory and an Onion, put on the ribs and let it cook for 4 hours, turning the ribs after each hour.
Temperature settled in between 230 and 250 for the whole time
After two hours :
The smell of the hickory, Onion and drippings made me crazy !
After a little more than 4 hours the ribs were done
The coals would have gone for at least another two hours.
Used them to grill up some onions.
Then i took care of the ribs. Wanted to do something different today, so basicly i made "pulled ribs"
Put the meat into a bowl and seasoned with Dinosaur Honey Garlic BBQ Sauce
And heres what you get if you combine "pulled Ribs" with some ciabatta, salad greens, grilled onions and Chipotle Mayonaise :
Propably the worlds best Mc Rib .
This will propably strike every McDonalds employee with awe.
I must say this was a very good late breakfast. Too bad that it was too early for a beer.

I have never had a McRib sandwich, but I can sure see doing that in the near future with some spares.
