The UK Butt Empty The UK Butt

When we went to our butchers to buy a Boston butt, they didn’t know the cut.

We had to wait for their next delivery of whole pig, and explained what Roxy had described - top half of a shoulder is called a butt bottom half is a picnic.

Ian won the toss and got the butt and I got the picnic.

As the cook was just for me and my wife, I managed to cut about a pound off one end, and put into the freezer for a rainy day.

The picnic was rubbed well with SR Kansas City rub, wrapped in cling film and fridged overnight.

This is now ready to go onto the Frontier. I used an apple chip for my smoke.

After 1 hour I spritzed well with apple juice.
The UK Butt 1Hour

Another hour and spritzed again.
The UK Butt 2Hour


And again an hour later.[/size]

After the 3 hours, it just needed a bit more apple juice and back on for 30 minutes.

Removed from the grill and added a nice amount of apple juice and wrapped in foil.

Then back onto the grill for 2 hours.

It was then unwrapped from the foil, the juices saved for the sauce and back onto the grill for last 30 minutes.

Prepared a basic salad of halved cherry tomatoes, spring onions and red peppers.

The meat juice from the foil were mixed with more apple juice and one spoon of plain flower, then simmered slowly to thicken. It made a sauce that was really good.

The butt was ready, and after resting for 20 minutes, was able to pull it nicely.

Served in a warmed wrap, it was delicious.

I got to wonder what they would call a Boston butt over there anyways.. Did the butcher ever tell ya what its called..?

Looks very good. I've cooked a fair amount of butts, but haven't cooked a picnic yet. They're cheaper than the butt over here, but probably yield a little less because of the bone size. Iv'e tasted them at a local farmers market cooked by an Amish vendor and it was very good.
It is on my list to try.

Hello,

Not sure if this is still relavent but I have found a butcher in Scarborough that own his own Pig farm and will do Boston Butts to order and post them.

Here is a cut n paste

"Yes no problem for collection on Wednesday. How big would you like them and how many are you looking for? I will have to work out the price when I butcher them but I would think that you will be looking at about £1.50 / lb ( £3.30 / Kg) Hope this sounds ok for you."

These are just like the ones you see in Bubba's Youtube Vid.

Are you referring to old Harvey the famous Bubba-Q from BBQtalk.ca..??

Those would sure be some mighty fine looking Canadian pork butts...

Oh, the things I could say but I will bite my tongue... I am thinking Harv is better suited to playing with wieners than coking pork butt..

Yep, that's the fella.

These Butts I ordered look just like that.

They are very good, like the post, I had a nightmare finding them and most butchers weren't prepared to have a go.

To be honest I have only seen the Pork Butt Youtube vid and I thought they looked the dogs. In fact thats where I spotted the Redicheck.

Thats just too funny..

I compete with old Bubbq-Q over here in Canada and... well... have kicked his Butt on more than a couple occasions.. Wink

He does cook a good hot dog. Razz

I dont know why its a problem.. Just take a whole shoulder and cut the top half off at the joint in the bone and ya got a pork butt..

I think the main problem over here is demand, I just don;t think enough people want them.

I don't think it's too much of a problem for real butchers, especially those with their own farms, but I suspect many of our local butchers and high street brands don't have access to the whole carcass.

Even baby backs and spares can present a problem near where I live. That said most of the population in my town think McDonalds is a staple diet. Very Happy

Yup it's a bit of a problem but my butcher is great.
He stopped getting whole swine and about a year ago but still manages to get full sections. I get to point to exactly what I want cut and how. As far as ribs go if I don't order them in advance I'm out of luck but failing that I can see when the truck pulls in so I walk over and give my butcher a gentle nudge.

I know that this is not relevant to most of you, but for those of you who are based in the midlands, I got some ribs from Birmingham market the other day. I asked about availability of a 'Boston Butt', the butcher said although he had not heard of it, they cut up whole carcasses every morning & would do any cut I wanted. They normally use that cut for pork pies, but had no problem if I wanted some for the following day.
