Not Strictly BBQ'ing!!!

Just knocked up a couple of Salmon and Cod steaks in the wood wraps, Cod fairly plain as my son Jamie doesn’t have much of an exciting pallet.

It’s not dazzling, took about 10 mins prep time but here is what I did for dinner:

1 25cl Bottle of Echo Falls Spritz (Christmas Left Over)
Hoisin Sauce
Dijon Mustard
Pepper Grinder
Coarse Sea Salt
2 Lemons
Fresh Parsley
Unsalted Butter

I soaked 6 Cedar Wood Wraps using two foil wrapped bricks, shallow baking tray and the Echo Falls Spritz for 2 hours.

To make the Salmon glaze mix the following:

1 Table Spoon of Hoisin Sauce
1 Table Spoon of Dijon Mustard
1 Table Spoon of Fresh Lemon Juice
1 Table Spoon of Melted unsalted Butter

To make parsley sauce:

Make a paste using melted butter and 1 table spoon of plain flour

Whisk in half a pint of milk to create the sauce, add finely chopped fresh Parsely.
Leave to simmer for 15 Mins

Add Salt and Butter to season.

Coat the inside of the soaked wood wraps with olive oil or similar, add 1 salmon fillet to each, then generously coat the salmon with the Hoisin Glaze.

Garnish with some fresh parsley and lemon as preferred.

Using a foil ties, roll the wood wrap and tie.

Bake in a Gas oven at Gas mark 7 for 30 – 35 Mins.
