Mack's Chilli and Garlic Sauce Empty Mack's Chilli and Garlic Sauce

This is a very quick and easy to prepare hot sauce, cunjured up by Ian McKend who has up until now kept it as a family secret. The beauty with this recipe is that you can make it as hot or mild as you like just by using different types of chilli peppers.

3 x Cups Chillies (a mixture of "bird’s eye and a milder one is best).
1.25 x Cups of peeled garlic cloves (the smellier the better).
1 x Cup white wine vinegar
1 x Cup olive oil
3 x Tsp Turmeric
1 x Tsp Ground coriander
1 x Tsp Paprika
1 x Tsp mixed spice
2 x Tsp whole pepper corns
2 x Tablespoons soy sauce
1 x Cup Freshly squeezed lemon juice
1 x Large Onion

Fresh herbs as required.
Put all the ingredients into a blender, then blend to whatever consistency you like…………… couldn’t be simpler.

Looks interesting. Big fan of garlic. Wonder how it would taste with the garlic roasted??
A question about the chilies...is that 3 cups whole or diced or what? scratch

Ozz, 3 cups whole chillies (adjust the quantity to suit), never tried it with the garlic roasted, as it works just fine for me by just throwing the whole lot into the blender (nothing more than peeling required).

Sounds great, thanks! I'm going to try it out this weekend. I'll try to make up a batch with roasted garlic and let you know if it's worth the effort. Smile

That sounds like a must try here too. I would guess that your 'mixed spice' is the same as our 'allspice'
