I use the WSM's for the majority of my low-n-slows...the drums are mainly for chicken...lots of chicken!

Looks great JD how's the cork mod working for ya?

I haven't paid close enough attention to the rotiss, or even thought of addint it to the drum. I may need to see how you have that mounted. Of course a Weber lid does not fit mine, so that may make it tough.

I'm in the same boat with the lid not fitting. The Weber was very difficult to fing do I wont be cutting it up anytime soon.

Your toy box looks cool. Can I ask, how do you control the coals and airflow in your UDS.

Any chance of a coupld of snaps of the inside?

I like the twins, I have WSM myself, I think they look better in a pair the problem is I like the look of the Excel and that would ruin the asthetics.

Quick question how do you find the depth of the water pan? I found I was topping it up quite often. Mack sorted me out with a ProQ pan and it's solved the problem.

I'm not using the corks any more...I've switched to a magnetic strip...less obtrusive.

Ahhhh smoothidea JD.

AWG- It's controlled from holes at equal distance just a few inches from the bottom of the drum. JD devised tabs that simply slide to block off the holes to control airflow thus adjusting the temps into smoke range.

Ahaaa. I see them, I completely missed that. I was expecting something bigger and less subtle.

No problem I'm thinking of going that direction on my UDS buy it wil have to wait a few weekends. I use a 3/4 '' ball valve to controll flow on mine and it works great but JD's just looks so smooth.

Look at the bright side, you can store your WSM in the Excel

Here are a few shots of the rotisserie mod...nothin' fancy...just a couple of slots on each side of the drum then mounted the bracket for the motor...easy peasy.

It was made by a local sheet metal shop for $20.00...I was amazed at the cost...so I ordered another one for the second drum.
