Minion Variation - or maybe not - you decide!
This has probably been done, but I'm going to smoke a pork butt tonight and thought I would try and take advantage of the uniform shape of the Coconut briquettes.
I have decided to tightly pack the coal basket and leave a small area at the centre to pour the hot ones. I have chopped up a couple of staves from old whiskey barrells (Which Smelt fantastic when sawing) and planted them throughout the rings, to hopefully stage the smokes.
I'm conscious about airflow through the briquettes but am hopeful there should be sufficient and I'm worried a little about the initial heat.

Opinions, thoughts, critique very welcome as this potentially a waste of a box. So if there are any budding Forensic Fire Investgation Specialists out there your view would be welcome .

I think it looks great but I have to say I need to know where the got the wood, I need somma that ASAP!

Al, the wood came from a firm called Ashwood in Northampton, you can phone them but you have to collect unless they can sort you out a delivery.
They will be doing a line in whiskey barrel staves and they are very accomodating.
The config: worked exceptionally well, it held at at between 235 and 240 til 4 in the morning and I did a little restock and waterpan top up. It would have held I think till about 6 without touching it but... I was a little apprehensive.
I had to throttle the vents throughout the night to stop it from rising above the high 240's. I really am puzzled with Bowtie Bills problems.
I used one and a half staves throughout the cook, the time is now 17.26 I restocked at 04:00 and the redi check is reading 186d F
Will upload some more snaps?

I tasted the results of this smoke and I have to say it was very good............ I think you might be onto something here chap

Honestly... I think it did offer some advantages in that I "think" (This could be a placebo) I had more control over the smoke and of course the fire had to radiate outwards so I think by containing the coals it regulated the burn in a bit more of a controlled fashion.
Another point I found was that, whilst I did spend time stacking the coals, they did burn uniformly but only if... all the vents are equally open, i.e if you would normally only open one vent then open all three equally one third.
Does this make sense????
failure to do this results in a poor burn on the sides that have restricted airflow.

What you can do is close each vent half way to cut the temp a bit and help keep the burn even without getting to temps to high.
I find I keep my vents open with my Excel and get the temps I want.. But a lot has to do with what you are using for fuel as some fuels burn hotter than others.
