potjiekos

Post  Chicago Jack on Tue Dec 09, 2008 4:25 pm

finally found a good Dutch oven worthy of sitting alongside my smokers. It's a potjie from south Africa.made from cast iron, it holds 14 litres and I'm looking forward to creating some potjiekos using smoked meats. No doubt i'll be contacting mack for some tips soon.

More homework...look up 'potjiekos'. So many new things to learn...so little time. (Google...here I come!)

****EDIT****EDIT****

Just got back from Wikipedia (via Google)...

In South Africa Potjiekos (IPA: /pɔɪ/kiː/kɔs/), directly translated "little pot food", is a stew prepared outdoors in a traditional round, cast iron, three-legged pot (the potjie) which is found in the homes and villages of people throughout southern Africa. The pot is efficiently heated using small amounts of wood, charcoal or if fuel is scarce, twisted grass or even dried animal dung.

Hopefully charcoal is not scarce for you! Wink
