Hi from Blackpool.

Hi everyone, I'm new to BBQ & am really enjoying it, started off with a small fish smoker but have bought an excel 20 after month of that because it wasn't big enough. I'm just seasoning the pro Q now and popping some salmon on just to get me started, then tomorrow it's pork shoulder and spare ribs. Enjoying the results so far but looking to experiment some more and got some great tips from this forum. Better go and put the salmon on. Very Happy

Cheers Doc, only used half a chimney of penbeads yesterday & some big K lump in the basket but was struggling to get over 200f with half a bowl of water, took salmon out, chucked the water away & replaced the bowl, it hit 220f, that was 4 hours after lighting. Today I'm going to try foiling the pan and popping in a clay dish not sure about sand so I'm going for that option. Using big K lump and briquettes today. Salmon looks great, that's the starter for tonight if all goes well, if not it's the main.
