Newby saying Hi

Hi all. Thought I should make my first post and introduce myself.

I'm an avid fan of cooking in general, and love experimenting with with ingredients. Last year took my old gas bbq apart and smoked a brisket with a great rub idea from Chef Rob Rainford. This inspired me to get a bit more serious about smoking. So I have now purchased the ProQ Excel, well actually my wife did for my 40th which is in July, so got in early to get some practice! Must admit brilliant service, and loving the product, ordered Sunday delivered Tuesday, have already fired it up and had a few initial probs with trying to get it up to temperature, but threw in a few more scoops of coal and that sorted it, and my my bird came out moist and nicely smoked. More practice required though. Have already booked my tickets for Grillstock as its in my home city and cant wait. Think I deserve a cap though Mac, as it is my 40th this year!
