Leftover pulled pork soup
I was checking in the freezer for something to cook for dinner tonight and I came across a bag of frozen pulled pork. I thought I'd try some pulled pork soup. It tasted fabulous and my wife was well impressed - she licked the bowl clean!
So I thought I'd post the recipe on here.
Serves 4 (or 2 if you're really hungry!)
2 leeks
4 large potatoes
4 large carrots
300g pulled pork
Stock (I used turkey stock cos I had some from Christmas)
1 tsp mustard powder
salt and ground black pepper
Chop the leeks, 2 of the potatoes and 2 of the carrots and put in a large saucepan with mustard powder and the stock and make the fluid up to about 2.5 litres. Add about half of the pulled pork at this stage. Bring this to the boil and simmer for about half an hour until the vegetables are soft. Let this cool slightly and then liquidize. Add salt and pepper to taste.
Meanwhile, dice the other 2 potatoes and 2 carrots and steam these until just tender. Cut or shred the remaining pork into smallish pieces. Add the pork, potatoes and carrot pieces to the liquidized soup.
Bring the soup back to the boil and serve and enjoy.
I hope you enjoy this as much as we did, it makes a fabulous soup for a cold winter's evening.

I use leftover PP to replace shredded Duck meat in wraps. With Hoisin,spring onion and cucumber you're hard put to tell the difference.
