Storing cold smoked trout
Hi all, just unwrapped my proQ frontier and want to get smoking as soon as possible (as i'm sure you can imagine). As a fly fisherman I got lucky over the weekend and now have some rainbow trout I wish to cold smoke. Can anyone advise me on how long i would need to cold smoke the fillets for, the best way to store them and how long they will keep please? Any help will be greatly appreciated.

Hi and welcome to the forum!
Cure the fillets 1st, then smoke for 6 - 10 hrs (depending on how smoky you like them. Vacuum pack them if you can and they will last a good 6 months in the freezer.
