Cooking Half Ribs, Cooking Times

Hi Everyone

I have cooked a whole rack of ribs on my Frontier following the Big Bob Gibson recipe and cooking times. Ribs were amazing, Cooking time was 4 hours at 250F.

I'm putting on BBQ for around 24 people this weekend. Due to the amount of people, the size of the frontier and cost of ribs I am only cooking two full racks along with burgers, chicken, sausages. I want to make sure everyone has a taste of the ribs, so I was thinking of getting the butcher to cut the whole racks in half, length ways so that everyone can have a half rib with some people able to have seconds

I would think the rough cooking time should remain the same 4 hours at 250F. Can anybody confirm my logic? Or have any other suggestions.

Cut a little time off your cook
In three hours they will be "done"
it is just a matter of how you plan to finish them
wet sauced, carmelized sauce or Memphis

I have change the requirement from 2 racks to 3 now. One more question when I smoked my last rack I use approx 4 oz of hickory wood (2oz at a time within the first hour). The Ribs tasted good and there was a nice smoke ring. Now that i am doing 3 racks should i still use the same amount of wood? Also now that the ribs are cut length ways will that effect the smoking of the meat?
