i got a smoker made for myself similar to a brinkman cimarron2899, however i thought it was simple, put the charcoal in one side the meat in other side. However that is not so.
What i did was light the coal, got it burning then slide it to the opening of the bigger chamber, added more coal let it burn the temperature maxed out over 600 deg f, so i add the chicken, at the cooler side some wood chips also but the chicken was bitter and well done burnt on one side.

So i would appreciate any help, do i use wood or charcoal, do i put the coal in the middle of the fire chamber or near the bigger chamber opening, wood chips i tried on the fire and in a container, which is best. little or no smoke i notice also.

Hi mate

Sounds like a bad experience... don't let it get you down!

I guess what you want to be doing is having the charcoal in the firebox along with the chunks of wood you're using for smoking. The idea is that you're using indirect heat for cooking, and if I remember rightly, the idea of the smoker cart that you have is that the smoke flows from the firebox across the food in the central chamber, and then out of the chimney, so you need some convection to encourage that to work.

Do you have vents on your firebox? Because that should help you to control the temperature if you can close them down. Additionally, if you're doing a long burn, put the unlit charcoal in the firebox first, then add a smaller amount of lit charcoal to it - a chimney starter is very helpful for this. The temparature will go high initially, but as you close down the vents a bit, it should settle. From memory, I think the ProQ Frontier tends to settle at around 260 F degrees, as does my smoker.

If i'm smoking a chicken, i'll normally aim for an ambient temperature at the roof of my smoker (I have a Kingsford bullet smoker) of 270 F degrees or so. So 600 degrees is way too high... sounds like you're allowing too much air in.

No problem - always leave your top chimney vent open a bit though, as that helps the convection.

If your vents were fully open, that was probably contributing to the high heat problem!
