Do'in a Brisket on my stickburner (7lbs of brisket glory) with Oak and Cherry. Going with Stubbs mop and Stubbs BBQ sauce and using TH's Bold Beef Rub. Just a fun smoke with my mascott Powdered Toast Man. Some starter pics are in order. Thanks for checking out my smoke. All the best...

That looks delicious!!! Was that the flat, or did you get a whole brisket that size? I was looking for a whole one yesterday and the smallest I could find was almost 13 pounds. Since I didn't want to tend my smoker all night, I ended up getting a whole trimmed one that weighs about 7 1/2 pounds. I will probably do it up tomorrow or Sunday and will post pictures (if it comes out OK, that is.)

How do you manage to do any smoking way up north in Ontario? Or do you have your smoker out in the garage?

Mike, I buy all my meat from a slaughter house, never a supermarket and just the way you see it. Mike I don't live in a Igloo up here. It gets to 90F or past 100F in the summer, but in the winter it gets as low as -20F. Been up your way last year, in Phoenix. Gods country you got down there Bud...
