salmon on cedar plank
hello guys
yesterday I have purchased a few cedar planks ,and would like to prepare salmon
now I have a few questions
salmon with or without skin?
soak cedar plank or not?
direct or indirect method?
heat the board first or not?
with what can I cover the salmon,or marinating the salmon?

I will try to answer your questions based on what I do:
salmon with or without skin?
> I have a Salmon fillet with the skin on one side of the cut, this can usually be separated and left on the plank when serving.
soak cedar plank or not?
> Definately, I usually soak mine in water but you can use wine or other flavourings.
direct or indirect method?
Either, indirect will usually take longer however, I use direct, you should still get 2-3 uses from your plank depending on its thickness.
heat the board first or not?
> I place the board over direct heat and when I see some dry veines running through the plank I thnk place the fish on it.
with what can I cover the salmon,or marinating the salmon?
I tend to like Jamie Purviances Hpoisin Sauce glaze:
Glaze
1 tablespoon hoisin sauce
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon unsalted butter, melted
1/2 teaspoon dark sesame oil

You can substitute this with Plum sauce if you get it.
Hoisin is a chinese type sauce.

A direct hit
Soak my plank in water
Glaze
1 tablespoon hoisin sauce, I replace by 1/2 teaspoon apple cider and 1/2 teaspoon maple syrup (Could not find any)
1 tablespoon Dijon mustard

the salmon rubbed
the cut off parts I finish with olive oil and salt and pepper,to try once
the preheated plank
salmon placed on the plank
salmon ready to go to table
on table
still bubbling, simmering at the table
the salmon cut
We have really enjoyed it, it is rapidly ready 25 minus and it is not much preparation
I use direct method, got it done on my Weber gas grill
We will certainly prepare this meal for friends
