Spatchcocked Cornish Hens

Post  bowhnter on Mon Jan 07, 2008 12:58 pm

I took some Cornish Game Hens and split them for the grill.

Took some Rosemary, Thyme, Garlic, Shallot, Chives and mixed in butter for under the skin and rubbed on top as well. Then used Montreal Chicken Seasoning.

Here is a plated picture, and you can use This link if you would like to see all the pics

The cutting board is what I won from TVWBB Christmas Drawing, and the sausages (Brat and Italian) Papa Tom and I made along with some of Bigwheels Hotlinks on Saturday.
