When you can't Q
The weather here at the moment is wet, windy and cold (not nice to BBQ in), so I decided to try cooking some Salmon.
Up until this time my favorite method has been to cook it on the Q on a cedar plank, but now I have an alternative... foil parcels (I've parceled other fish many times before, but never salmon).
EVO and coarse salt before laying the salmon down on some foil. Chop thin strips of carrot, pak choi, hot pepper, asparagus, and sprinkle with salt, black pepper and herbs, add a knob of butter and a table spoon of water. Wrap the parcel tightly and cook for 10-15 mins at 350 Deg F.
I removed the pepper for the kid's parcel's and the consensus was it is now one of their favorite meals
What do you do when you can't Q ?
