Ricotta coating for chicken

Had this on chicken the other night. I find most of the smoke flavour I get in chicken seems to come through the cavity rather than the skin anyway so in theory this should not have much effect on the smoke flavour in the flesh. Basically its a mix to stuff between the skin of the breast and the flesh:

Mix well:

cup of ricotta
handful of rocket roughly chopped
5 slices of serrano roughly chopped
a healthy dash of lemon juice
a small handful of toasted pine nuts
