just dont know what to do............
heya guys hope your all well
i have a serious problem, and it goes like this........
sice getting bitten by the smoking bug ive tried to smoke several chunks of meat and veg etc, and now everytime i look at a recipe i think right im gonna do that, and then i see another 1 and think im gonna do that instead.
then i get to the shop and wanna buy every peice of meat in there, so my plan is, the first person to think of a recipe and literally just make it up im gonna do it this weekend, i reckon we could think up some great new recipes, only serious ones guys no cat or dog s*** kebabs , i dont mind em but the neighbours complain about the smell lol.

Hey Mat, I'm going to do a piece of topside on Saturday. Am thinking I'm gonna do something a bit different. Got a bottle of Stout in the beer shed and a bottle of organic dandelion and burdock so I'm thinking a d&b and stout marinade overnight tomorrow with garlic and thyme in there. I fancy a rub made with chipotle chili and cacao.
It's a bit different but my logic is that chipotle and cacao work wonderfully in chilli con carne with beef. And stout/d&b should give a mild sweet and sour effect along with good tenderizing effects on the beef.
So there's a recipe for you if you're feeling adventurous

I'll post some pics on Saturday after I've done it and let you know how it turned out. Could be a disaster but could be good.

Did mine yesterday. It turned out well, I can see areas of improvement, particularly in the rub but I think this is one to develop.
So the marinade I did was:
250ml Guinness
350ml Dandelion and Burdock, full sugar rather than diet.
4tbsps Olive Oil
3 Cloves garlic, bashed and thrown in the marinade.
1 tbsp dried thyme
1 tbsb dried oregano
1/2 tsp chipotle chili powder
2 tsp cocoa powder
1/4 tsp cinnamon
All mixed together then the beef was marinaded over night.
In the morning, I took the beef out of the fridge, patted it dry and applied the rub. I used 1/4 cup home made all-purpose rub spiked with 1 tsp cocoa powder and 1/2 tsp chipotle chili powder.
I then smoked for few hours with hickory, had to cook it to medium as one of my dinner guests is pregnant and won't touch rare meat. Fortunately the middle of the joint was still on the rare side of medium for me
I found it to be some good eating. I think I would do a bespoke rub next time, I think the celery salt that's in my all-purpose rub doesn't compliment the cocoa as well. I'd also consider sweetening the rub slightly as it had a bit of a rough edge that I think I can smooth out. It was good though, perfectly enjoyable.

hey steve doe mine today it was great, i did actually put demmarera sugar in the marinade by mistake but it turned out well i took some pics, i just gotta get me usb port fixed then i can show them.

Glad it turned out well for you. The sugar in your marinade might have been a been a fortunate mistake. I reckoned I needed a touch more sweetness in the dish but I think next time I'll add that via the rub. I might go with an injection marinade too
