Hi all
I've just received my Frontier smoker, which I'm setting up this weekend and I'm thinking of smoking some duck breasts. Any hints or tips are greatly appreciated.

Hi Jon and welcome to the forum.
I often do duck breasts at demo's as it's really easy. Rub with your favourite herbs and spices, refrigerate overnight.
Take them out of the fridge at least 1 hour before you want to put them on the smoker, so they can get up to room temp.
Smoke them for around 30 - 40 minutes, skin side up, then drop the grill down (or remove the water pan) and crisp up the skins.
I like my duck fairly rare, so you may need to adjust the timing to suit your needs.

1st smoking experiance!
Just had my 1st smoking session and apart from not putting on enough charcoal was awesome The two duck brests I did were beautiful. I'm going to have a go at a leg of lamb so any further tips are very much appreciated..cheers
