Hi Everyone,

I posted this in the wrong place yesterday. I have been given a haunch of venision, any ideas on how to smoke and how long to cook ?.

Sorry I can't help ya out there, never cooked venison before.

I would think the meat would be very lean and it would be a good idea to bard it to keep it moist. Bacon comes to mind.

I have never done it either, but you would only want to go to medium rare.

I did a search and seen a recipe that said to brine it first, which sounds like it would help with moisture and for sure use bacon as Roxy suggested.

Gad, I dont know if I would be believing a thing that old fart told ya.. Last cook of his I read about he was working on his 3rd 1/5 of Jack Daniels and still able to type.. Very Happy Very Happy

I know, I actually talked to Ed on the phone when I just got started a couple years ago...about my first high heat butt...turned out pretty good.

So Karinamaria...let us know what you do, how it turns out...and take pictures!

Never smoked any, cooked tons of it on a grill though. Best advise I can provide is to not over do it. If it's too well done it's like shoe leather, but then you could always continue on and make jerky out of it if it's too well done. Laughing

Perhaps a high heat and short duration would serve you best. As they say, free advise is worth just what you paid for it, U.J.
