Potato Bombs -Version 2
I posted a recipe previously, but since then I've been playing (as one does )
The outer ingredients
Poppy seeds, chopped nuts (sounds painful), sesame seeds, herbs de provencal and bread crumbs.
The fillings... tried several things, blue cheese, salmon/ginger, mussels, olives and some chilli. I found that my favorite is still the olives.
Balls, before poking, these are about 1.5 inches in diameter.
Poked and ready to receive the filling.
Re-sealed and rolled, prior to rolling them in a mixture of bread crumbs and dried herbs.
Ready to go (I found it's best to refrigerate them overnight, as this allows the filling to infuse the surrounding potato.
Cooked for 25 - 30 minutes at between 250* - 300* using Hickory for smoke flavour.
Delicious!

Hmmm...got me thinking. I think there are some potato bombs in my future.

Those look great. In fact I'm going to have a pop at these.
I'll have to do them the cheats' way of doing them in the oven (just until I'm allowed to use my E20 then I'll smoke them).
As fillings, I'm going try one or all of the following:
1. Caramelising some finely chopped red onion with a bit of garlic, then throwing a glug of balsamic vinegar in at the end and leaving to rest before stuffing. The flavour should really infuse well with the potato overnight in the fridge I think they could be coated with a mix of breadcrumbs and toasted pumpkin seeds
2. Saute off some baby spinach with a bit of lemon juice, garlic, nutmeg and black pepper, then whizz it up in the magimix and throw in some cheese, probably feta or some other strong goat's cheese.
3. Some chicken breast, chopped into tiny pieces, mixed up with a bit of 5-spice and ginger then flash fried and mixed in with a little hoi-sin sauce so it goes sticky. Sesame Seed coated for sure.
