Smokin' Newb awaiting my new Excel 20!!
Hello all!! My name is Ian (not the one who runs this joint LOL), from Kentucky. I have been smoking on a Cabelas electric water smoker for some time and have finally decided to upgrade. After months of researching and comparing I narrowed it down to the upcoming Weber 22.5" WSM and the Pro Q Excel 20. I will be honest, at first I wrote the Excel 20 off and was focused on getting the 22.5 WSM as I am a Weber man. However, the more I waiting for the release of the 22.5 and the longer it went with no one having it stock the more and more I started reading about the Excel 20. Yesterday I took the plunge and ordered a Pro Q Excel 20 w/extra stacker from Fred's. After reading pretty much every single thing I could find on the Excel 20 and the 22.5 WSM, I think I made the right choice even if the WSM would have been available. I am pretty excited about this thing coming in, I can't wait to fire it up and toss on a few racks of STL cuts!! Don't worry, when the Excel shows up I will post many pics!!!!! Any beginner tips you guys have would be greatly appreciated!!

I am from a small town called Flatwoods, KY. It is in North Eastern KY, about 1.5 to 2 hrs east of lexington.

Not sure what my first cook will be....Do I need to "Season" it first or should I just "Season" it with my first cook.....I am thinking of either ribs and some chicken wings or a boston butt... Leaning towards chicken wings and ribs...What do you guys think I should do first??

Hey Ian,
I would season it without the meat for the first cook, so you can get a feel for your new toy
Plus it can help seal the seams a little and make your first real cook that much better!
