Hot water cornbread

...and black eyed peas (beans) for dinner tonight. Plus a round of southern pork chops.


The only corn meal we could find and it worked out very well.

1 cup cornmeal
1 cup 'boiling' water
pinch salt
pinch baking powder
few oz "pot liquor" you southern folk know what i'm talkin bout.

*Pot liquor is the juice from cooking greens.


Add part of the boiling water slowly and mix in with your hands or start off with a fork if you have tender fingers..


Should be firm yet wet almost like a thick paste. This is something you need to get a feel for fo get your hands in there. Make a patty that fits easily in your hand then shape and add to hot oil..


This is the point where you want to remove them trom the pan. Remember make them the last thing in the line up as they need to be served piping hot don't worry they dont take long to make and you can do the prep work early on if need be. Place them on a plate covered with paper towels..



Now drop a bit of real butter on them and eat while piping hot.



Now if you like yours a little sweet then just add a dash of sugar to the mix. I perfer them just as they are so I can mop and dip the juices from the beans, greens, ham etc. It was mentioned to me the jalapenos go great chopped up in the mix , I'll be trying that next time. Wink
