Baked a cake on the Weber yesterday
...and it came out very well with no smoke taste what so ever.

I've never tried baking anything like that on the grill. Have done dinner rolls and pizza, but never a cake...will have to try it.

I suggest you guys grab a box of corn bread mix with your first order. It's a childhood favorite and just has to be on a plate with great Q or a bowl of chilie.

I'm making up about 3 gallons of Texas Red Chili today...may have to do up some cornbread too! BTW...Not that I'm trying to stereotype myself, but I carry a container of Grits in my BBQ Bus to have at competitions!

Nothing wrong with keeping Grits on hand. My kids love and every Sunday is daddys time to make Grits ,bacon, scrambled eggs and toast.
Gotts love how grits stick to your ribs and hold you for hours. You mention yellow cake as a childhood favorite and it was one of mine but the all time prize winner with me was Hot water cornbread baby!! I would wonder through the kitchen and steal as much as I can when the women were cooking on the holidays ( he!! I still steal it when I'm back home). lol Tonght I may do hot water cornbread IF I can find cornmeal around here.

Hot water cornbread? You haven't lived until you have hot water cornbread! My family made it all the time and it goes well with pinto beans or any other southern dish! I tell you, that and greens will make you slap your momma!
The best I've had was when a friend of mines made it. He cooked pinto beans with ham hock and chitterlings as a side. I almost burst my stomach eating so much. I'd do it again too.
Grits? I made some yesterday. I don't like the 1-minute variety. You have to get the original, long cooking variety (IMO) for the best taste. No one makes it like the good ole days, but it still tastes good. I found a site that sells the southern variety, but being overseas makes me stick to what's available. The price isn't bad though.

Eating them hot almost right out of the skillet is dangerous to say the least but the smell of them cooking just makes you do silly things. Grab em hot and drop some of that warm butter on them from the stick momma was going to use for pie is the best.
Man the butter running down your burning fingers with your mouth open trying to cool the burn as you run like Carl Lewis through the angry Gran-momma-auntie-big momma gauntlet in the kitchen yelling and "DAMMIT BOY" and swinging dish rags and wooden spoons at your head to safety in the back yard just makes the day that much more special.

How to make it..
HOT WATER CORNBREAD
1 c. white cornmeal
1 c. yellow cornmeal ( I perfer to only use the yellow)
1 tsp. salt
Mix thoroughly and pour in 2 cups of boiling water containing 2 tablespoons of shortening. * use your hands as a spoon just aint the way ot's done!* This produces a firm mound of dough. Set the dough aside and let it cool for a bit.
After the dough is cool, work in 1/2 teaspoon of baking powder dissolved in 2 tablespoons of hot water. Grab off a chunk of dough and pat into round cakes about the size of your palm. Fry the cakes immediately.
Fry in deep fat hot ( shortning) enough to bubble freely over the cornbread. This cornbread should have a crisp crust on the outside, yet be soft on the inside.
If you want to go old school don't bother measuring, momma never did so just feel your way around.

I'm tellin ya guys make it and you wont be sorry. It's simple and basic food just like the BBQ we love that kept our grandparents bellies full.
I think we are a bunch or people that not only enjoy food but know that simple smells and procedures bring back memories of days gone by and family time that can never be replaced.

Stay away from using sugar as it wont need it!!! Fry it in good old plain Crisco or lard for those on this side of the pond.
Don't try and get fancy adding things, just keep it basic and you will be far happier with the results.

Purple Hull peas. I remeber sitting down with my grandma and "shucking" those bad boys for hours. The end result was something special though. Those peas, cornbread and baked macaroni/cheese...what an excellent memory.

It's been a few years Doc. My folkes kind of went away from it. All I have is memories
The last time I had it was at a friends, about 10 years ago. It will not make it to next week before I try this on my own though!

Jenx you hit it dead on! Black eye peas, rice, greens and hot water cornbread... the meal for kings! I'm not a fan of mac and cheese but it's time to recisit them I think. You know on the site I posted * www.americansoda.co.uk * the have some there and plenty of other things to bring back the good times.
