1 stacker or 2?
Hello,
I got an excel 20 a couple months back and have a question....if I am only cooking enough food to fit on one grate can I just use the one stacker...or is it better to use both stackers all the time and cook on the top grate?

I think it would depend on what you were cooking to be honest. If I were doing anything other that brisket or butt/shoulder then I guess one stacker would be fine.
I'm no pro but I think the added room for smoke and distance from heat would be beneficial.

I could be very wrong here, I have a frontier, I only use two stackers when I absolutely have to. The less chance to loose heat & smoke the better (I think). The temp will be more consistent at one level, I think it varies over two. Though having said that, it works fine when I use two, I just monitor the temp a bit more carefully.

I use two stackers to start off the cook, but after the ribs were smoked as much as I can get them, I take out the water pan and use only one stacker, with the ribs foiled of course. This method has worked fine for me.
