Brisket
Did a brisket last Friday. Here are some photos. I rub the brisket with a spice mixture I make myself that includes only Salt, black pepper, hot chili powder (HOT) and garlic powder.
I mop it with a mop sauce I make from apple juice, apple cider vinegar, hot pepper sauce, brown sugar, parsley, pepper and chili powder. I change it from time to time. It isn't really written down.
The brisket turned out awesome, you could cut it with a fork. I also made my secret smoked baked beans.
The desert is by my wife the ex-baker. Homemade angelfood cake with marscarpone pudding, topped with bananas, strawberries and blueberries. We forgot to get whipped cream but I really didn't miss it!

(Apple) Butter Beans
I don't have it written down and I have to confess I have only just started trying to write my stuff down but I'll do my best. I only made a small batch because it was only my wife and I. I'm going to apologize right now, I don't know the amounts exactly. I add some then taste it.
1 can pinto beans
1 can butter beans (they look like limas hey man use whatever beans you like)
1 yellow onion diced up
About 5 or 6 slices good bacon also sliced up (I used plumrose pepper maple bacon this time)
Molasses (about a tablespoon or two)
1/4 cup maple syrup (grade B if you can get it - grade b is from the last sap collection and is the darkest and most flavorful - don't think you'll really taste it in the beans but I always try to by the B)
You may substitute brown sugar for the maple syrup if you like.
Apple Butter (I think I used about a half cup)
Course sea salt
Course Black pepper
4 large cloves garlic (or however much you want)
Hot pepper flakes - as much as you like - or not.
Mmmm that's all I can think of.
Fry the bacon first - I fry it up pretty hard so it's crunchy. Then add the onion till it's translucent and lastly the garlic.
Add the rest of the ingredients and put it in a stainless pot or bowl and smoke it with your other stuff. When you open the smoker to mop your meat or about every hour or so, give them a stir. Don't leave them on too long or they will dry up.

Apple Butter
I was afraid many many wouldn't know what that was due to our huge diversity on this site. Basically it's apples cooked for a long time with spices such as cinnamon, cloves, allspice and sugar. It needs to be cooked a long time. A crock pot works great for this. It is available in the grocery store here but if it isn't you can make it yourself.

It kind of interesting. I am originally from Pennsylvania and the area was settled mostly by people of German descent. They call them Pennsylvania Dutch (it really should be Pennsylvania Deutsch) or Pennsylvania Germans, of which I am one. Apple butter was a Pennsylvania German thing. I was amazed to find it here in Florida. Some stores do not carry it or only one variety. It's not hard to make but does take long. It's very on toast. Just use it like you would jelly or preserves.
Pennsylvania grows a lot of apples. Maybe the German people devised this apple butter after coming to America.

Here in Belgium you can find an apple syrup
it's apple juice cooked so long,to be smooth as margarine
but there are no spices in the recipe
maybe I can add the herbs in your recipe ?

Making Apple Butter
The way we made it was to core and peel the apples then cook them down to basically applesauce. Can you get applesauce there? Then you add the spices and cook it more.
Here is a recipe using applesauce to make it so you don't have to cook the apples down.
