To be honest it was a trial to see how it would work and what other ways we could use the pan, Ian was very concerned about the risk of such high fat in a confined space with nowhere for any expanding air to get out.
John Feeney our resident Pro Chef, took the lead and recovered some of the liquor from the pan for a gravy, then clean out the pan and tossed in a block of Lard (Pig Fat). When this was at temperature we put in the potatoes and cooked them.
The end result was fantastic, we chewed over the idea of cooking Goose and using the goose fat in the same way. We also looked at using the water pan to steam Christmas puddings and generally take advantage of its size for other tasks during a cook.
Over this weekend we have done a traditional Christmas / Thanks Giving Christmas Fayre on the Excel in addition to a whole host of other meats and recipes that at the minute aren't so traditional but give it time.
I envisage in another 100 years old Bob Cratchets wife will be slaving over the ProQ for Tiny Tim.
