Hi all,

Just bought a leg of lamb from the butchers, bone in.

I was planning to hang it from the hooks in the lid of the frontier and smoke it, just wandering if anyone had any experience of this,

I was thinking of a pretty basic rosemary and garlic prep, but any ideas for, prep, timings, temp, rubs or woods would be really appreciated

De bone it and butterfly it, so it looks like a whole flat lamp of meat. Marinade it with Juice of a lemon with zest, chopped chilli, 2 bay leaves (Thinly sliced), minced garlic, chopped rosemary, cracked black pepper, dash of extra virgin loive oil and sea salt. Rub all of that in both sides and wrap and chill in fridge for about an hour or two. When cooking have a two zone cooking areas, quickly cook on both sides to seal in the juices over the coals and then move over to the indirect heat and cover untill medium rare ( personal taste ).
Slice up and enjoy with some flatbreads and salad.
