Hello to everyone I`m Pete been a Q`er for as long as I can remember,and that's a lot years .I`m 74 and have always used a Webber Kettle, with a good deal success,but not to be left behind I`ve got to try this smoking thing
.I'm sure I`ll get the hang of it and I really do like the taste of food that's smoked,any way I took the plunge and bought myself a smoker it arrived about 1hour ago just finished putting the feet on so now I`m looking forward to getting soom grub or tucker to try it out.hope I`m allowed to do this but a few snap sorry have`nt got the hang of inserting photo`s willtry to do later Pete

Hello Gary,I`ve got a Excel 20 used it a few times trying to get the temps and the feel of it Cooked a beer can chicken a couple of times and two racks of ribs with a fair amount of success sure I`ll improve the more I do. Anyway this weekend I will be put to the test I`m smoking a gamon joint 9 pounds a joint of beef 6 pounds and a few chicken thighs plus a few peppers. Will let you know how it goes,try and post some pics Pete

Cool, make sure you do!

I use a wsm myself and cooked up a pork leg yesterday, gave it six hours at 230F and used Hickory chunks and Jack Daniels chips on top of some lousy charcoal briquettes that I bought from Somerfield. Turned out delicious though and I got a really thick smoke ring as well which always makes me happy lol.
