French Cut White Veal...hmmmmmmmmmmmmm!
Well finally got round to cooking this fine piece of meat, the results were fantastic, but I think that was down to the quality of the meat, rather than my dubious cooking skills
Rubbed with whatever I could find at the time (since moving house, my fine collection of rubs has misteriously dwindled )
After 2 hours of languishing in some Cherry wood smoke, it's ready to come off (int temp was 60 C)
A truly beautiful sight indeed!
One of the happy customers... looks like he may have imbibed a tad too much of the red nectar

Looks like a fine piece of meat there Mack. One question though do you you make all your guests dress up in pro q merchandise lol

Early 2007 i bought a similar, expensive cut for sundays dinner. Trouble was, i was on my way to our first team meeting.
Had the meat hidden in the cooler and somehow one of my new teammates found it.
Since we didnt have any food around at all i had to sacrifice it, we seasoned with just salt and pepper and carved with a
cheapo camping knife but the meat was out of this world.

Holy macaroni that looks amazingly awesome! I think I better go for now...need to get my mind off food for a while...still waay to early for lunch right now.
