Minion Method Empty Minion Method

Would anybody be able to give me some advice on using the Minion Method to smoke in a kettle grill or is this method primarily for water smokers ?

I use it in my Weber with no problem. I only cook indirectly on it though.

As Dr Ky mentioned...not a problem on a kettle. Assuming you're doing some slow smoking/cooking, you will want to offset cook by pushing the coals to one side, or dividing them up and shoving to 2 sides of the kettle. Just make sure the cooking area of the grate does not have hot coals directly undernieth.

Thanks guy I will finally get round to smoking those ribs today, the rub has been on for 2 days now, was suppossed to smoke them yesterday but got 2 call outs to work. Pics to follow

I had a bunch of left 0ver lump to get rid of (small bits that I can't use in the smoker) thats why you see alot fell through. Using larger pieces will prevent that so don't worry about all the scrap you see in the bottom of the kettel.

Minion Method Empty Bourbon Glazed Ribs

I got this recipe from "Smoke and Spice". The ribs did not turn out quite that well as I think they were over cooked at too high a temperature. They were very dark and crunchy. Im not too disappointed as I should have used a thermometer and I put it down to this. I still did not get round to ordering my ET-73 yet so I will not do any more smoking till then. As they say you win some and you loose some, my Tandori chicken and Jerk pork turned out superb. No pics of the final ribs as they were basically black Sad

Tesco ribs, for my next session I 'll order baby backs from the butchers

Try placing you heat only on one side of the kettle like in my pictures above that way you can set the exhaust opposite and not over heat things.

Those spring clips on the legs are used to hole up the ash catcher, lift the pan as high as it will go and slide the retainers under them. As for a thermo you don't need them with ribs,it's all about timing. I wouldn't let those sit on the Weber for more that 2.5 hours unfoiled.

In the excitement of building the Weber I always wanted I forgot to put one of the the spring clips on the legs as I was building it, then when it was complete it was too late because the legs cant be removed now Im without an ash catcher Sad

Thanks for your advice on the where to place the heat I will follow that for my next session.

First off, I have to say that Billie Jean is such a cutie...Love the pink sunglasses! Smile

Pushing the coals to one side, and rotating the lid so that the top vent is on the opposite side, will help to draw the smoke over the meat. Also, pushing the coals to one side will free up more space on the grill so that you wouldn't have to overlap the ribs.

The ribs do look great!

Just turn the BBQ upside down and give the leg with the missig clip a twist and pull. It will coke off at least enough to slide the clip on.
