In the market for a smoker..

I'm thinking the excel is the way to go..

Are they still shipping in July?

I'm a virgin smoker. Don't have a clue as to what I'm doing but I can't wait..

Be careful with JD he knows wayyy to much for us to grasp so ask him to take baby steps . Very Happy He is the smoked chicken king baby!!!!!!!!!( I'm serious if you want to know how to UDS a bird then this is the go to guy!)

I'm doing a smoker dance to try to get the Excel here by the 4th..

Any ideas for a first time smoker on what to smoke?

Also.. do I just do a dry run on the first smoke (i.e. no meat) to temper the thing?

Do I need to buy a larger size pant to accomodate the eventual weight I will gain?

Pork butts are pretty forgiving for first time cooks. It's a long cook, but worth it. Unless you're a seasoned brisket cook, I would not suggest trying it on the first time out.

Since I've never owned a bullet smoker of this quality, I will defer to those who already have one for the seasoning process.

It was good. The smell was fantastic. However, the gas heat tended to dry it out (plus it was the flat so it was even more lean).

Problem was texture wise it looked more moist than it was. Wasn't as tender as I would have liked. Tasted like BBQ roast beef really.. No complaints from people eating it but wasn't what I was looking for.

I'm a Texas transplant. Originally from Tennessee.

Are you up in Kentucky?

You guys are gonna love the XL like no other. Very Happy

As of yet I haven't found anything that needed to be modded and she purrs right out of the box. I may add an additional hole for my probes just above the coking grate though.
