Alabama Smoker Empty Alabama Smoker

Hey everyone, I am from Huntsville, AL and have been smoking for couple of years now on a Chargriller. I purchased a Frontier from Fred's and received it this past Friday. Smoked a pork butt on Saturday which turned out perfect. with two stackers the heat maxed out and held at 225 for about 8 hours. On Sunday (today) I used 3 stackers full of split chicken breasts. With water in pan I could only get temp up to 190 in top. Would not budge any higher. I finally removed the water pan and temp shot to 275 and the chicken on bottom stacker cooked faster than I wanted to. The smoker only has one vent on bottom. Is it possible for me to purchase two more vents and install myself? BTW, I was missing one part in the box. One upper toggle latch piece. Where can I get one of these? Does Fred's carry extra or am I out of luck?

I really did enjoy my Frontier this weekend. I also have to find a way to anchor it since it is so light or the wind will blow it away.

One thing you will find with the Frontier.. You got some customer service unlike anything you have experienced.

Not to mention an awesome cooker.

Thanks guys for the welcome! I went for years and years and (more) years grillin very poorly to the point that I went without a grill for 15 years. I watched a video many years ago of a man showing how to grill various types of meats. I followed his approach and not bad! I grilled only for a few years before I tried smoking. Well, disaster set in again. I waited awhile and researched on internet and found some you tube videos that helped me understand the basics. I still have a crap load of learning and practicing to come but I am up to it. Really having fun. Funny, the better I get at it seems like the more friends I have. Even my children come over more often.

I haven't gotten into making my own rubs and sauces yet. Just using bottled stuff. Maybe some day.

That is the fun of making real BBQ, it is a life long journey with some damn fine eats along the way. Don't be afraid of trying to make your own rubs and sauces. If your up for it, I have posted a couple sauce recipes here that are easy to make that will get you started..

Thanks Roxy - always scared to screw up a good piece of meat I guess. I will find your recipes and give them a whirl this weekend. Well, I have to photograph a wedding Saturday so it might be Sunday.
