Hello from Buffalo NY, USA (you know where it snows all the time) Laughing

I have my own little catering company and do whole hog most of the time. We also make our own bacon, sausage, and can every thing from the garden. Oh yea, jam and jelly, apple sauce, Guess I should just say it's old school around this house. Been lurking for a while so I thought I'd jump in. Good Q to you all!

Yea, I did one ONE time. I don't think there that good. I have had smaller ones from other folk in the past, I think you need to have a larger hog to get the flavor. Fat is where it's at. Laughing

I don't do less than 100 lb. I get my hogs from a friend down the road, he feeds them well and they are well cared for. (old school again)

I'm going to do a suckling pig on the Q soon, so I'll be able to see if I agree with your point of view.
I'm all for well looked after animals... what you put in is what you get out.
