Advanced (!) - Anyone Smoked Overnight?

Post  ant_in_wales on Tue Oct 04, 2016 7:53 am

Hi People

We've been very pleased with our Proq (check out delighted Review) and now want to try something advanced - overnight smoking!

My butcher says he can do me a shoulder joint with the bone in (USA style) but it's going to be big and need about 16 hours.
I reckon if I start around 6pm the night before I'll be bang on.
My only fear is the BBQ going out.
I'll top up the water and coal around 11pm (I use good Restaurant grade charcoal, as should we all) but do you think this will be OK until I get up around 7am?
Has anyone tried this?

Cheers y'all, and hope the British smokers have taken a rainy, under-BBQ'd summer better than we have.

Tony

Hi Tony

Re your shoulder i would do my first top up of charcoal and water around midnight, i would also close the vents to at least half way closed and then that should see you through till around 6am just make sure you put plenty of charcoal in the basket and you have plenty of water in the pan and you should be ok

happy smoking from Paul

Interesting - half close the bottom vents rather than closing one completely!
I like it, as then you've still got oxygen moving throughout the fire pit.

OK, I'm onto it!
